Crispy Chicken Thighs

This is the meal of love. It’s homely, comforting and it says “right now, I want to take care of you.” It’s the meal you cook someone when the first I love you is said.

Okay, I’m starting to realise that I see a big connection with chicken and love or food and love. It might be that most of my favourite meals from my childhood do revolve around chicken. Or that I think sharing a meal with someone is super romantic and this is one of my best recipes. It’s so simple and so good! Cook this for the people you love.

Ingredients: 

1kg of Chicken Thighs
1 tbsp of Ghee
2-3 Cloves of Garlic, sliced
Himalayan Salt
Pepper

Method: 

  1. Preheat your oven to 200C/392F/Gas Mark 6

  2. When ever cooking with chicken wash it with water and pat dry.

  3. Season with salt and pepper, and give the chicken thighs a little massage so that is soaks up the seasoning.

  4. Heat up a frying pan on high heat with ghee. Once the ghee is hot add in the sliced garlic and straight on top place the chicken, skin down.

  5. Cook until the chicken skin is crispy and golden, then flip. At this point your chicken is NOT fully cooked, the goal here is to get the skin crispy and to seal the chicken to keep is nice and juicy.

  6. Once you’ve sealed the chicken, place on a baking tray skin up. I like to spoon over some of the ghee from the pan to keep the chicken tender, juicy and the skin crispy.

  7. Roast in the oven for 30 minutes until the chicken is cooked through.

Notes: 

  • You can your oil of preference, I just like the flavour the ghee gives

  • Don’t slice the garlic too thin otherwise it will burn very quickly, thick garlic slices work best
